Organic Produce – Monday, February 7th

Good morning everyone!

Lots of 2nds today: zucchini, huge sweet potatos, apples and yellow peppers. The yellow peppers are beginning to shrivel, so use them today or make a stir fry. Here’s a basic recipe:

1 yellow pepper sliced into 1/2 inch pieces
1.5 c. bok choy (if you have from last week) sliced into 1 inch pieces
1/2 c. mushrooms sliced
1/2 onion sliced thin
1 charrot cut into matchsticks
1 zuchinni halve and sliced into 1/4 inch pieces
2-4 cloves garlic crushed (depending on your taste)
1 c. broccoli steamed for 4 minutes (optional)

sauce – mix the following together in a measuring cup
1/2 c. water
1 T flour (or other thickening agent)
2 T soy sauce
1 T honey
1 t. fresh grated ginger (opt) (You can buy ginger in a big chunk, use what need and freeze the rest for another time). Then when you want to use the ginger again you peel off some of the skin and use a microplane to grate how much you need for a recipe.)
2 cloves garlic crushed

Sautee onions and carrots on high heat for 2 minutes. Add in bok choy and zucchini for 2 minutes. Add mushrooms for another 2 minutes. Taste some of the vegetables to check if they are cooked to your liking (they should be a little al dente because they will cook a minute more with the sauce). Add sauce and stir until the liquid begins to thicken or disappear.

Serve hot over brown rice.

Today everyone got either a red pepper or broccoli, so pick your box according to your preference. Also, I am trying something new. I have a box of extra stuff set aside. If there is something in your box that you don’t like you can trade it for something in the Extra’s box. The Extra’s box has sweet potato, carrot, apple and 1 bunch of kale.

zuchinni
sweet potatoes
apples
yellow peppers
broccoli or red pepper
spinach
mushrooms
oranges
bananas
pears
potatoes
onions
butternut squash
kale
